En De Salas We like to try new experiences and if they are related to pleasures such as wine and traveling, much better. This week we have found three different ways to approach a good wine, taking advantage of the fact that the holidays are just around the corner.
Our first stop takes us to Lanzarote, the most volcanic and magical island of the Canary Islands. There, between lava and wind, lies Origival, also the so-called “vineyard of the impossible”, the oldest winery on the island that nurtures the volcanic Malvasia grape, an exceptional pre-phylloxera variety.
Due to the trade winds that blow continuously and the fact that mechanization is not possible, the people who started the El Grifo winery managed to make great wines in an absolutely natural and artisanal way, because, among other things, the phylloxera that occurred in the last third in Europe, it did not reach the Canary Islands.
This made it possible to plant the vines openly, without the need for rootstocks, as was always done. He Dry Malvasia Collection 2018 It is pale yellow in its youth, with greenish iridescence, very clean and bright. On the nose, the varietal character of the grape dominates with floral aromas such as orange blossom or jasmine, which evolves towards stone fruit notes such as apricot or peach.
Complex, fresh, lively but at the same time harmonious, with volume and a broad finish, it is harvested manually at the end of July. After cold decanting of the must, fermentation begins at around 16ºC to remain on its lees and preserve the fruit, enhance its varietal specificity and give it complexity.
The next trip returns us to the peninsula, specifically to the banks of the Duero, in the Zamora town of Toro. There we find Valbusenda Hotel Winery & Spa, the jewel of wine tourism and signature cuisine par excellence of the region.
